Our Napa Valley Cabernet Sauvignon vineyards are hand-picked in multiple passes to harvest the fruit in lots based on ripeness and flavor. After careful hand sorting, de-stemming, and gentle crushing, the juice cold soaks on the skins for 24 hours where it picks up the beautiful color and rich flavors that have become the hallmark of Rosé. The juice is then inoculated with a yeast ideally suited for preserving fruit flavors and maintaining freshness. A long, cold fermentation (10º-13º C) in stainless steel tanks helps preserve the beautiful fruit aromatics.Pairings
