Tasting Notes

This wine is all about structure. It is deep and complex with all the dark and bramble notes you expect. This wine opens with blackberry and black currant. The full bodied wine releases tobacco, chocolate, and cedar notes on the palate. The finish is long with strong tannins that linger on the palate.

Vineyard Notes

This reserve wine is a blend of Cabernet Sauvignon from Rutherford and Oakville in Napa Valley. The Rutherford vineyard is known for adding an earthy component to the wine. Some people refer to this attribute as "Rutherford Dust." It lends a rustic nature to the wine. On the other hand, Oakville is famous for bringing complex and deep fruit flavors. Together these two vineyards blend the perfect Cabernet Sauvignon.

Production Notes

Each vineyard was harvested separately and fermented individually. After 2 years of aging, the wines were blended based on the winemakers preference. The wine was then aged an additional two years to allow the flavors to integrate and the tannins to soften slightly.

Pairings

This is a big and complex wine. As such, it demands big dishes to compliment the deep tannins. This is the wine that you open on steak night. I pair this wine with a giant tomahawk ribeye and let the fat and tannins unite on the palate.
